Thanks to the help of bprosman on the Circuits Online forum here is some documentation:

Most of it is for a different P2000 (Model M), but the P2000T service manual is there! Also some nice "Nieuwsbrieven" from the user group. :)

There is an emulator here https://www.zophar.net/p2000/m2000.html which appears to include the ROMs
